Roasted pumpkin seeds. I love this time of year, don’t you?
Heat oven to 400 degrees.
Evenly spread raw seeds on cookie sheet covered with foil and sprinkled with olive oil.
Sprinkle and toss with thyme sea salt.
Pepper to taste.

I’m a little enamored, as usual, with squash this time of year. But this time around, I’m asking some more serious questions as I gear up for a launch dinner party, Oct 18th.
Those “serious” questions involve:
- What are the most popular squash variations?
- Which squash varieties preserve the best for all-around year eating?
- Which are the most popular squash recipes?
On the most popular variations question, I think it’s safe to say it be: Butternut, Zucchini, Yellow, and Pumpkin. Would you agree? (For a full varietal guide published by the Bay Area, visit here.)
For varieties that preserve the best and are served in mass year around - zucchini and yellow appear most frequently in dishes. But many varieties provide healthy, must-have nutrients as this Top 10 Veggies post points out.
Most popular squash recipes and serving preferences, this part I’m still filtering through myself. But general observations would say it would boil down to:
- Sauteed (Grilled, Roasted or Stovetop)
- Butternut Squash Soup
- Pumpkin Soup
